There are a ton of great ways to make a s’mores version of ice cream: vanilla ice cream squished between two graham crackers, dipped in chocolate; vanilla ice cream with swirls of chocolate, graham cracker, and mini marshmallows; the list goes on. You really can’t go wrong with any combination of chocolate, graham cracker, and marshmallow.
But, being a chocolate lover, I chose to make chocolate ice cream and swirl in some marshmallow fluff and graham cracker crumbles — and the result did not disappoint. I picked a really simple chocolate ice cream recipe that I had used before (without a custard base, because I was feeling lazy), but you can sub in a different chocolate ice cream recipe, if you’d like.
S’mores Ice Cream (adapted from About.com):
- 1 1/2 cup whole milk
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 2 cups heavy cream
- 1 tsp vanilla extract
- graham crackers
- marshmallow fluff
Whisk together the milk, cocoa powder, and sugar until the cocoa powder and sugar have dissolved.
Add in the cream and vanilla extract and whisk until homogenous.
At this point you want to partially freeze the ice cream — I left my ice cream in the freezer overnight, then let it sit out on the counter for about 1/2 hour to soften.
Crumble the graham crackers and bring out the fluff.
You can serve the ice cream in between two graham crackers for an ice cream sandwich!
