Guess Who’s Back (With Peanut Butter Cookies)

IMG_7332Happy New Year everyone! I have grossly neglected this blog, but it’s my new year’s resolution to get back into the swing of blogging more often. Hopefully this will be more successful than my previous resolutions, although I really can’t see how it could go worse.

If your resolution was to find a seriously easy cookie recipe, or a way to use up that jar of peanut butter gathering dust at the back of your fridge, look no further. These peanut butter cookies only require 3 ingredients, and they are gluten-free, if that’s what you’re into these days. Plus, they come approved by a famous cookie critic — this recipe comes from Mouse Cookies, a.k.a. from the If You Give A Mouse A Cookie mouse. That dude knows his cookies.

I used natural peanut butter, which turned out really well, but you can use whatever kind of peanut butter you’d like (I might experiment with flavored ones, like my favorite cinnamon raisin peanut butter or Trader Joe’s cookie butter). And you can always top them with Hershey kisses.

Peanut Butter Cookies:



  • 1 cup peanut butter
  • 1 cup sugar
  • 1 egg

Preheat the over to 350 degrees Fahrenheit.

Combine all ingredients in a bowl, using a wooden spoon or beaters on a low speed.

Roll the dough into 1-inch balls and place on a baking sheet.


Bake 10 to 12 minutes, or until the cookies are golden. Let them cool for a few minutes, and then you can press the tines of a fork into them to make a pretty pattern, or add Hershey kisses. Enjoy!
