Hi friends! I’ve gotten some requests for easy salad recipes, and I’m more than happy to oblige (plus it helps me get all my ideas in one place, so win-win!). I try to eat salads for lunch, and I usually prefer heartier salads. The nice thing about salads is that you can throw a lot of different stuff in there — I use leftovers from dinner to expand my lunch salads the next day.
Side note: If you pack these salads for lunch, I suggest keeping the dressing/anything wet separate from the greens so they don’t wilt!
First, my go-to salad:
I love an arugula salad with a Dijon-vinaigrette dressing. My mom taught me how to make the dressing and I don’t really have a strict recipe for it — it’s somewhere around 3 parts olive oil, 1 part red wine vinegar and 1 part Dijon mustard. Feel free to vary that to your liking!
Once the dressing is ready, I usually throw together arugula, halved grape tomatoes (I roast them in the winter sometimes with garlic), cubed mozzarella, and chickpeas. Other possible add-ins: carrots, avocado, sliced radishes, farro or quinoa. I’m always trying to make my meals be either pizza or as close to pizza as I can get, so the cheese and tomatoes works well.

Shaved Asparagus and Mint Salad (light, good for spring/summer)
Heidi Swanson’s Pan-Fried Giant White Beans with Kale (this isn’t really a salad but oh well it’s good)
Charlie Bird’s Farro Salad (I made this long ago and I think I left out the bay leaves, pistachio, and mint and it was still yummy)
Quinoa and Grilled Sourdough Salad (we’ll just count this as a salad, too)

Tomato Salad with Corn, Summer Squash and Roasted Onions (great in the summer)
Moro’s Warm Squash & Chickpea Salad with Tahini (good anytime)
French Lentil and Arugula Salad with Herbed Cashew Cheese (except I don’t make the cashew cheese, I just added goat cheese)
Kale Salad with Avocado Tahini Sauce (requires a lot of chopping, but the dressing is really good!)
